Recipe: Thai Shrimp - Rezept: Thai Shrimp mit Kokusmilch

This is probably my favorite recipe to cook and eat, as of lately! It is so easy and fast to make, and tastes amazing every time. And it is healthy!

You could substitute chicken or fish for the shrimp, or leave it out all together and add more veggies.

Ingredients:
  • 1 lb of shrimp
  • 1 lemon
  • 1 onion
  • 1-2 cloves of garlic
  • 1 zucchini
  • 1 bell pepper (red, or yellow for the color)
  • 2 carrots
  • peas
  • mushrooms
  • 1 can of coconut milk
  • 1/2 can of tomato paste
  • Thai curry paste
  • curry
  • chili
  • salt
  • pepper
  • olive oil  (or cooking oil of your choice)



Marinate the shrimp in the lemon juice and a little bit of olive oil. Chop all the vegetables, bite size or smaller.
Fry the shrimp in a separate pan until done and season.
Roast all of the vegetables in a wok or big pan. Add salt and pepper to veggies. Next, add the coconut milk, tomato paste, curry paste, and the rest of the seasoning to taste, let it cook for a few minutes. At the end add the shrimp to the vegetables and it's done!

Now enjoy!

It takes about 30 min. and serves 3 - 4 people.

You can use different veggies as well. Sometimes I add broccoli, yellow squash, soy bean sprouts... Try it with your favorite veggies!


Rezept: Thai Shrimp mit Kokosmilch

Das ist mein neues Lieblingsrezept. Es ist super lecker, einfach und schnell fertig! Und dazu ist es auch noch gesund!

Anstatt Shrimp kann man auch Hähnchen oder Fisch nehmen, oder noch etwas Gemüse hinzufügen und ein vegetarisches Essen daraus machen.

Zutaten:

400 g Shrimp
1 Zitrone
1 Zwiebel
1-2 Knoblauchzehen
1 Zucchini
1 Paprika (rot oder gelb)
2 Karotten 
Erbsen
Pilze
1 Dose Kokosmilch
3 - 5 EL passierte Tomate
Thai Curry Paste
Curry
Chili
Salz
Pfeffer
(Oliven)Öl



Shrimps im Zitronensaft und etwas Olivenöl für ca. 15 min marinieren. In der Zeit kann man das Gemüse klein schnipseln; die Stücke sollten alle so klein sein, dass man kein Messer mehr braucht um es zu essen, Zwiebeln und Knoblauch natürlich kleiner schneiden.

Die Shrimps in einer heißen Pfanne mit Öl anbraten. 
In einer zweiten Pfanne das Gemüse auch in Öl anbraten. Kokosmilch, passierte Tomate, Curry Paste, Curry, Chili, Salz und Pfeffer zugeben und nach Geschmack würzen. Danach die Shrimps in den Gemüsemix geben und kurz ziehen lassen. Und fertig!
