Recipe: Butternut Squash, Potato & Carrot Soup with Spicy Meatballs - Rezept: Birnenkürbis-, Kartoffel- & Karottensuppe mit Pikanten Fleischbällchen

So, about two weeks ago we signed up for a service that delivers organic veggies and fruits right to your door. It's called Palmetto Organics and our gym has a partnership with them where we get a even better deal! Last week on Monday we received our first delivery. Here is what we got:



One butternut squash, three sweet potatoes, four red potatoes, five plums, four bananas, one avocado, one head of butter-leaf lettuce, one head of broccoli and two cucumbers. We knew what we were going to get on Friday before, but it was still exciting to actually see how much it was. 

The bananas are all gone, so is the lettuce and all but one plum! I still have the sweet potatoes and to be honest, I've never cooked them myself, but I'm excited to do so soon!

I was really excited about the squash! I just love squash! That was one of the first things I used after we got all this deliciousness! 

My husband has braces at the moment and last Tuesday he went to the dentist to get them tightened. They do it about once a month and especially on that day his teeth hurt pretty bad and he can't really chew anything. So, I thought, soup would be perfect.

Back when I lived in Germany, I had cooked a squash soup, so I gave it another try. (This receipe is adapted from Allrecipes.com.)

Recipe: Butternut Squash, Potato & Carrot Soup with Spicy Meatballs

Ingredients for the soup:

  • 2 tbsp of cooking oil
  • 1 small onion
  • 1 clove of garlic
  • 2 carrots
  • 2 - 3 potatoes 
  • 1 medium butternut squash
  • 2 - 4 cups of chicken/vegetable broth
  • salt
  • pepper
  • curry


Directions:

  1. Chop up the onion, garlic and carrots. Cube the potatoes and squash. I didn't peel the potatoes or the squash.
  2. Heat the oil in a large pot and cook the veggies for about 5 min.
  3. Pour in enough of the broth to cover the vegetables. Bring it to boil, then reduce the heat to low and cover pot. Simmer for about 30 - 40 min, or until all veggies are tender. (The smaller the cubes, the faster they'll be tender.)
  4. Strain the soup, but make sure to save the liquid and set it aside. Transfer the cooked vegetables to a blender, blend until smooth, add liquid as needed. Return to the pot, and mis in any remaining liquid, or add broth until you like the consistency.
  5. Season with salt, pepper and curry to your liking.


Ingredients for the spicy meatballs:

  • 1 lb ground beef (lean)
  • 1 - 2 eggs
  • 1/2 onion, chopped
  • salt, pepper, cayenne pepper
  • olive oil

Directions:
  1. Knead the meat and egg with hands until it is smooth. 
  2. Add the chopped onion. 
  3. Season to taste. 
  4. Form little meatballs and fry in a hot frying pan with hot olive oil.


I made my husband try it with his eyes closed because I wasn't sure how he would react to the color/consistency if he saw it first. He really loved it!

This soup is really filling and it tastes amazing, especially if you like squash! I'm sure you could leave out the potatoes to make it even healthier. I might try that next time.

Rezept: Birnenkürbis-, Kartoffel- & Karottensuppe mit Pikanten Fleischbällchen

Seit letzten Montag bekommen wir jetzt jeden zweiten Montag Biogemüse und -obst nach Hause geliefert. Hier gibt es dafür ein Service und mein Fitnessstudio hat eine Partnerschaft mit dem Service, wodurch es für uns noch etwas günstiger gibt. Oben seht ihr das Foto von unserem ersten "Paket". Kartoffeln, Süßkartoffeln, Salat, Gurken, Birnenkürbis, Brokkoli, Avocado, Pflaumen und Bananen waren dabei!

Die Bananen und den Salat haben wir schon verspeist. Und hier findet ihr ein Rezept für den Birnenkürbis und die Kartoffeln:



Zutaten für die Suppe:

  • 2 Teelöffel Öl
  • 1 kleine Zwiebel
  • 1 Knoblauchzeh
  • 2 Karotten
  • 2 - 3 Kartoffel
  • 1 mittelgroßer Birnenkürbis
  • 500 - 1000 ml Brühe
  • Salz
  • Pfeffer
  • Curry
  1. Die Zwiebel und Knoblauch fein schneiden. Karotten klein schneiden. Kartoffeln und Kürbis würfeln. (Beides habe ich nicht geschält.) 
  2. Öl in einem großen Topf erhitzen, darin das Gemüse für ca. 5 min anbraten.
  3. Alles mit Brühe übergießen, so dass das Gemüse überdeckt ist. Zum Kochen bringen, danach die Hitze reduzieren und für 30 - 40 Minuten abgedeckt köcheln lassen bis das Gemüse weich ist. (Je kleiner man alles schneidet, desto schneller geht es beim Kochen.) 
  4. Abgießen, aber die Flüssigkeit auffangen. Das Gemüse mit einem Pürierstab oder in einem Mixer pürieren, Flüssigkeit nach Bedarf hinzugeben. Danach die Suppe wieder in den Topf geben und soviel Flüssigkeit hinzugeben, bis es die gewünschte Konsistenz hat.
  5. Nach Geschmack mit Salz, Pfeffer und Curry würzen.
Zutaten für die pikanten Fleischbällchen
500 g Rinderhack
1 - 2 Eier
1/2 Zwiebel, gehackt
Salz, Pfeffer, Cayenne-Pfeffer
Olivenöl

  1. Hackfleisch und Eier verkneten bis die Masse cremig ist. 
  2. Die kleingehackten Zwiebel hinzufügen und nach Geschmack würzen.
  3. Aus der Masse kleine Bällchen formen und in einer heißen und geölten Pfanne ausbraten.
Josh, mein Mann, hat zurzeit eine feste Zahnspange und ca. einmal im Monat wird diese fester gespannt. An diesem Tag kann er dann so gut wie gar nicht kauen. Dieses Rezept war perfekt für einen dieser Tage, aber ich war mir nicht sicher, wie er auf die Farbe/Konsistenz der Suppe reagiert, also habe ich ihn erstmal mit geschlossenen Augen probieren lassen. Er fand es superlecker! Das wird es noch mal geben!

Man kann die Kartoffeln in der Suppe sicher auch weglassen, dann wäre es auch ein passendes Rezept für die 10WBC-Diät. Das muss ich dann beim nächsten Mal ausprobieren!
